M\u2019hi vaig haver de posar una mica a corre-cuita perqu\u00e8 vaig veure que uns estols enormes d\u2019estornells ja els comen\u00e7aven a ullar i en un parell de dies no me n\u2019haurien deixat n\u2019hi una. Aquesta mena d\u2019ocellots negres, quan <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">veus que comencen a volar baix i xisclen contents veient la taula parada d\u2019un oliverar, ja et pots afanyar perqu\u00e8, quan <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">s\u2019hi posen, s\u2019hi posen de veritat i fan m\u00e9s feina que tot un ex\u00e8rcit de treballadors morts de gana<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">&#8230; Tot plegat, nom\u00e9s en vaig recollir uns modestos 50 quilos, que ahir a la tarda vaig portar r\u00e0pidament a <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">un <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">mol\u00ed per tal que no se\u2019m fessin malb\u00e9. <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">Les olives s\u00f3n una mica senyores i volen ser tractades amb molta cura<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> . A canvi, em van donar 5 litres d\u2019oli, <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">que \u00e9s m\u00e9s aviat poc<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">a cosa,<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> per\u00f2 que <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">em va fer tota la il\u00b7lusi\u00f3<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> del m\u00f3n<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">. <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">\u00c9s un<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> oli <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">que en diuen del<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> primer raig; <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">un oli verd\u00f3s i esp\u00e8s<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">, sense filtrar, que feia un goig que enamorava. <\/span><\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">Mentre <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">anava<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> collint les olives<\/span><\/span><\/span> <span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">a m\u00e0, tot munyint-les suaument de les rames, anava repassant records de temps antics. <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">U<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">n <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">dels que tinc m\u00e9s vius de quan <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">era petit \u00e9s el d\u2019anar a &#8220;plegar olives&#8221;. <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">Parlo de quan tenia nom\u00e9s 8 o 9 anys i, per tant, era <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">tan menut que ben<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> po<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">ques olives podia plegar<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">. <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">Els records que ens queden d\u2019<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">aquells llunyans temps de la infantesa <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">normalment arriben en forma de flaixos que fotografiaven moments de la nostra vida i que van quedar impressionats en el nostre cervell <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">i <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">que<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">, de tant en tant, retornen ben vius al cap dels anys per alguna causa que ens els fa reviure<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">. <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">El record de \u00abplegar olives\u00bb -que \u00e9s com ho <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">acostumem a dir<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> aqu\u00ed al Pla d\u2019 Urgell- havia quedat adormit <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">durant anys <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">en algun plec del cervell i ara s\u2019ha despertat de cop en tornar a fer aquesta feina aquest parell de dies. H<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">e recordat sobtadament <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">quan de ben petit <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">em feien fer de<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> fogoner i <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">havia de cuidar<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> el foc <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">que es feia al tros, perqu\u00e8 alguns dies eren molt freds i amb boira baixa; jo em distreia fent una bona foguera i posant troncs que fessin una bona xera<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: Verdana\"><span style=\"font-size: small\"><span lang=\"ca-ES\">,<\/span><\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> mentre anava mirant com els grans <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">anaven fent la feina<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">&#8230; Com a molt, ajudava a estendre les borrasses sota els arbres, <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">a arreplegar alguna oliva que havia rodat fora de la borrassa, <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">a treure tot el fullam que queia junt amb les olives<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> i a cuidar <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">de que el fo<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">c<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> no s\u2019apagu\u00e9s. <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">Aquesta era tota la meva feina i el<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> record que tinc d\u2019aquells temps: m<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">olt fred, molta boira, dies curts i ben aprofitats i un b<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">on foc per tal de poder atansar-s\u2019hi de tant en tant i <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">retornar una mica les mans balbes del fred<\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">.<\/span><\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft\" src=\"https:\/\/i0.wp.com\/blocs.xtec.cat\/flore\/files\/2013\/10\/banc.jpg?resize=142%2C192\" alt=\"\" width=\"142\" height=\"192\" \/>&#8220;P<\/span><span lang=\"ca-ES\">legar olives&#8221; \u00e9s una feina pr\u00f2pia d&#8217;aquests mesos de finals de tardor i hivern. L&#8217;<\/span><span lang=\"ca-ES\">explica molt b\u00e9 aquesta p\u00e0gina sobre <a href=\"http:\/\/www.valldelcorb.info\/pobles\/costums\/Pagesia\/collirolives.htm\">temes de pagesia<\/a>\u00a0i he volgut recorda-la perqu\u00e8 ja sabeu que quan ens fem grans la nost\u00e0lgia ens acompanya sovint.<\/span> <span lang=\"ca-ES\">Se sortia de casa ben d\u2019hora perqu\u00e8 el dia en aquests mesos \u00e9s fa molt curt i la posta de <\/span><span lang=\"ca-ES\">s<\/span><span lang=\"ca-ES\">ol arriba sense que ni te n\u2019adonis. Si el camp on es treballava quedava lluny de casa, es dinava al tros mateix amb unes bones arengades i cansalada a la brasa i algun pebrot o tomata escalivada a les brases, <\/span><span lang=\"ca-ES\">tot plegat acompanyat amb uns bons tragos de vi. Aqu\u00ed a la nostra terra la collita es feia<\/span> <span lang=\"ca-ES\">estenent les borrasses al voltant de la soca de l\u2019oliver i fent caure les olives a<\/span><span lang=\"ca-ES\">mb les mans o per mitj\u00e0 d&#8217;uns estris anomenats \u00abraspes\u00bb, \u00abarpetes\u00bb, \u00abpintes\u00bb o &#8220;rasclets&#8221;, que amb <img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/i0.wp.com\/farm4.static.flickr.com\/3207\/3053622307_8282aa035b.jpg?resize=186%2C124\" alt=\"\" width=\"186\" height=\"124\" \/>totes aquestes denominacions es coneixien segons els llocs. Per arribar a les rames m\u00e9s altes, a m\u00e9s de pujar a dalt de l&#8217;arbre, s&#8217;utilitzaven els <\/span><span lang=\"ca-ES\">t\u00edpics<\/span><span lang=\"ca-ES\"> \u00abbancs de plegar olives\u00bb, que eren unes escales triangulars, de fusta, amb una cama que els feia de suport.<\/span><\/span><\/span><\/p>\n<p style=\"text-align: justify\" align=\"left\"><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">Un cop s\u2019havia acabat un arbre es buidaven les borrasses als cabassos i d\u2019all\u00e0 als <\/span><span style=\"color: #000000\"><span lang=\"ca-ES\">sacs<\/span><\/span><span lang=\"ca-ES\">. <\/span><span lang=\"ca-ES\">Quan<\/span><span style=\"color: #333333\"><span style=\"font-family: Verdana, sans-serif\"><span lang=\"ca-ES\"> comen\u00e7ava a fer-se fosc, es carregaven al carro els sacs d\u2019olives que s\u2019havien recollit per dur-los cap a casa; i gaireb\u00e9 sempre, abans de sopar, <\/span><\/span><\/span><span lang=\"ca-ES\">i abans de portar-les al mol\u00ed, s&#8217;havien de \u00abpassar\u00bb, o sigui netejar-les de qualsevol element estrany que les acompany\u00e9s: fulles, brots, terra, etc., per <img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft\" src=\"https:\/\/i0.wp.com\/blocs.xtec.cat\/flore\/files\/2013\/10\/passador.jpg?resize=141%2C167\" alt=\"\" width=\"141\" height=\"167\" \/>mitj\u00e0 del \u00abpassador\u00bb. <\/span><span lang=\"ca-ES\">El \u00abpassador\u00bb era un pla inclinat amb una renglera de llistons, met\u00e0l\u00b7lics o de fusta, disposats en sentit longitudinal, damunt el qual s&#8217;abocaven les olives a poc a poc amb una galleda o un cab\u00e0s. Les fulles i la terra queien al s\u00f2l a trav\u00e9s dels espais buits del passador i les olives i els elements m\u00e9s voluminosos rodolaven fins al peu del munt que s&#8217;anava formant. Una darrera passada amb les mans per eliminar els brots i si hi havia cap pedreta, completava l&#8217;operaci\u00f3 de neteja.<\/span><\/span><\/span><\/p>\n<p style=\"text-align: justify\" align=\"left\"><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">L&#8217;operaci\u00f3 de moldre les olives al mol\u00ed i extreure&#8217;n l&#8217;oli que contenien, rebia el nom de \u00abdesfer\u00bb i tamb\u00e9 de \u00abxafar\u00bb. Antigament el pag\u00e8s demanava torn al mol\u00ed i recollia l&#8217;oli de les seves pr\u00f2pies olives. El moliner era retribu\u00eft amb diners o amb una part proporcional del fruit transformat denominada moltura. Perqu\u00e8 l&#8217;oli sort\u00eds bo i sense regustos calia moldre les olives aviat despr\u00e9s de collides, perqu\u00e8 si es tardava massa temps i estaven amuntegades hi havia el perill que s&#8217;escalfessin, o sigui que entressin en fermentaci\u00f3.<br \/>\n<\/span><\/span><\/span><\/p>\n<p style=\"text-align: justify\" align=\"left\"><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">Antigament les rodes del mol\u00ed que xafaven les olives fins a convertir-les en pasta, eren mogudes per animals. I la premsa per extreure l&#8217;oli era de maneig manual. La pasta que cabia en una premsada rebia el nom de \u00abpeu\u00bb i era la que proporcionaven unes quatre quarteres d&#8217;olives. Per facilitar l&#8217;extracci\u00f3 de l&#8217;oli, la pasta es dipositava en \u00abesportins\u00bb que es posaven un sobre l&#8217;altre, fins a omplir la premsa.<br \/>\n<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright\" src=\"https:\/\/calgorina.files.wordpress.com\/2012\/01\/img_0055_6_7_tonemapped.jpg?w=1250&#038;h&#038;resize=223%2C136\" alt=\"\" width=\"223\" height=\"136\" \/><br \/>\nL&#8217;oli que sortia de la premsa s&#8217;encabia en piques i es clarificava\u00a0per decantaci\u00f3. El solatge que quedava a les piques una vegada arreplegat l&#8217;oli clar, rebia el nom de \u00abmorca\u00bb i es recollia en un dip\u00f2sit subterrani anomenat \u00abinfern\u00bb, on a final de campanya el moliner sempre hi trobava alguna cosa aprofitable: oli m\u00e9s o menys depurat, subst\u00e0ncies greixoses per usos industrials, etc. La &#8220;pinyola&#8221; era lapasta de les olives que sortia de la premsa una vegada extret l&#8217;oli i s&#8217;aplicava a diferents usos: aliment per a les b\u00e8sties, per fer foc o per aplicacions industrials.<\/span><\/span><\/span><\/p>\n<p style=\"text-align: justify\" align=\"left\"><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">Ara, com podeu suposar, tot ha canviat i els m\u00e8todes de recol\u00b7lecci\u00f3 s\u00f3n tots uns altres si la plantaci\u00f3 \u00e9s gran. Ara es fa amb artefactes mec\u00e0nics accionats per mitj\u00e0 de la for\u00e7a motriu dels tractors que colpegen les branques o que fan vibrar els arbres a partir d\u2019uns enganxalls que se subjecten als troncs. <\/span><\/span><\/span><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">I tamb\u00e9 han canviat els trulls. Quan s\u2019arriba al trull normalment s\u2019ha de fer cua per poder abocar les olives a la tremuja que queda soterrada. A trav\u00e9s d\u2019una cinta transportadora pugen les olives fins a la m\u00e0quina ventadora, que separa les olives de la fulla que sempre hi queda barrejada. Despr\u00e9s les olives es renten i es pesen. <\/span><\/span><\/span><span style=\"color: #333333\"><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">A <\/span><\/span><\/span><\/span><span style=\"color: #333333\"><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\">continuaci\u00f3 una<\/span><\/span><\/span><\/span><span style=\"color: #333333\"><span style=\"font-family: Verdana\"><span style=\"font-size: medium\"><span lang=\"ca-ES\"> nova cinta transportadora les conduir\u00e0 fins a la m\u00e0quina que les moldr\u00e0. Les olives perden ja la seva forma i es converteixen, despr\u00e9s de passar per aquesta m\u00e0quina en una pasta. Aquesta pasta passar\u00e0 a un remenador on s&#8217;hi estaran una hora i mitja. Aquest remenador va extraient-ne el l\u00edquid, que encara haur\u00e0 de passar per dos processos m\u00e9s. Un consistent a separar la polpa que encara hi ha barrejada en aquest l\u00edquid.
